Saffron Pasta Salad

Pasta Salad Ingredients:

  • 1 pound of your favorite pasta 
  • 1 tablespoon olive oil
  • 1 pinch saffron threads, crushed with a mortar & pestle
  • 1 pound asparagus, cut into bite-sized pieces (discard tough ends)
  • 4 cloves garlic, minced
  • Fine sea salt and freshly ground black pepper
  • 1 (14-ounce) jar of artichoke hearts, drained and halved
  • 2/3 cup grated Parmesan cheese, with extra for serving
  • 1/2 cup toasted pine nuts

Lemon Basil Vinaigrette Ingredients:

  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh basil leaves
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper

Directions:

  1. Saffron Infusion:
    • Warm the olive oil in a small saucepan over medium-low heat. Remove from heat and stir in the crushed saffron threads. Let this sit for about 10 minutes, or overnight for a stronger flavor.
  2. Prepare the Vinaigrette:
    • Mix lemon juice, Saffron olive oil, chopped basil, Dijon mustard, sea salt, and black pepper in a jar. Seal the jar and shake vigorously until well combined and emulsified.
  3. Cook the Pasta:
    • Boil the pasta in a large pot of salted water until al dente. Drain the pasta, rinse under cold water, and set aside to cool.
  4. Sauté the Asparagus and Garlic:
    • In a large sauté pan, heat olive oil over medium-high heat. Add the asparagus pieces and cook for about 5 minutes, stirring occasionally until they are tender-crisp. Add the minced garlic and sauté for another 1-2 minutes until fragrant. Season with salt and pepper.
  5. Combine Ingredients:
    • In a large bowl, mix the cooled pasta with the sautéed asparagus and garlic, artichoke hearts, Parmesan cheese, and toasted pine nuts. Pour the vinaigrette over the top and toss until everything is well-coated.
  6. Serve:
    • Serve the pasta salad immediately, garnished with extra Parmesan cheese if desired. Alternatively, refrigerate in an airtight container for up to 3 days. Enjoy your flavorful saffron-infused pasta salad!
